Whisk 2 whole eggs and 3 yolks with sugar in a mixing
bowl and mix in flour, baking powder, a few drops of orange
essence and a pinch of salt; lightly toast almonds in
the oven and add to batter. Shape batter into 3 cm wide
and 1 cm tall loaves and lay in a well-buttered and floured
baking-pan; brush with whisked egg and put in the oven
at 180°; bake for 15 minutes, slice into crosswise
1 cm wide sections and place back into oven for 10 additional
minutes to crisp. These biscuits are traditionally dunked
into Vinsanto (traditional Tuscan dessert-wine).
